Zucchini Boats

Our garden this summer has been producing a ton of zucchini! At the start of spring we moved our garden box to a location in our yard to get more sunlight (this was no easy feat since we have a 8 foot garden bed!). More on that in a little bit.

We have been trying different zucchini recipes since we have so much (and passing them off to family and friends). Inspired by my in-laws, we decided to make zucchini boats and they came out delightful. Essentially, create a saucy filling of your choice (meat or no-meat, sauce, other vegetables, cheese of your choice) and slice up your zucchini (the long way and then in half again; scrap out the insides/seeds) and sprinkle with some light seasoning. Fill the boats and bake at 400 degrees for 10 minutes. Add a little bit more cheese and then bake for another 10 minutes. Be sure to put some olive oil on the baking pan before popping in the oven, this will help the skin soften while it bakes. Delicious and healthy, two-in-one!
