Fall is in the air and I’m ready for a healthy change in diet and exercise. Some may see spring time as the ideal season to get back in shape and prepare for the summer months ahead, but I embrace fall, as my favorite season and time for re-growth and new experiences.
This sweet potatoe, black bean couscous recipe is simple healthy and easy!
Simply prepare and combine all ingredients listed below:
- Black beans
- Sweet potatoes (soft boiled and sliced)
- Green onions (diced)
The dressing is homemade as well with half and half olive oil and balsamic vinegar, a whole lime juiced, salt and pepper and sliced basil leaves.
